The Original BBQ Chicken Chopped {Salad}

July 10, 2011

Apparently, my addiction to salads with corn and tortilla strips is picking up speed. One sight of those two ingredients in the description of a salad at any restaurant, even when I'm not in the mood for salad, and I can't bring myself to order anything else. My latest love -- California Pizza Kitchen's Original BBQ Chicken Chopped.

Ingredients: Sweet corn, black beans, jicama, cilantro, basil, tortilla strips and Monterey Jack tossed in homemade herb ranch dressing. Topped with BBQ chicken, tomatoes and scallions.

The corn and scallions added an extra bit of freshness that I haven't noticed with any other southwestern-style salad I've had. It's definitely MVL approved.
